Condo Chronicles: Sunday Dinners

Once the calendar hit September and football was on TV all day-Sunday, it was time to break out the crockpot. I have a smaller one, I think it’s 4.5 quarts, but it works well for Josh and me—and we can even get leftovers out of it.

I’ve compiled a running list of our to-go crockpot recipes in a Google doc that Josh has access to since it also has our regular weekday dinner options listed. A few of the recipes were trial and error, so in that doc, I’ve modified them to fit our needs—mostly so we don’t end up with enough leftovers to feed a crowd.

For the most part, we make these on Sundays, but occasionally will make them during the week; Josh likes to make something in the crockpot on his day (Thursday) to make dinner. But when we meal plan for the upcoming week, we always pull up our crockpot list for our Sunday dinner and make sure we have enough leftovers for another night.

  1. My seasonal go-to currently is chicken a la king. 4-5 frozen chicken tenderloins, a can of cream of chicken and a can of cream of celery, and about 2 cups of frozen mixed veggies. I cook all of that on low for about 8 hours then add a packet of Ranch seasoning and bake some frozen biscuits (usually 2 per person). Cover the biscuits in the ‘chicken slop’ (as my husband calls it) and you have a delicious and easy comfort food meal. 🙂
